Struggling

I'm struggling to find meals with enough "substance" to satisfy my hubby.  I really, really need some advice on how to plan vegan meals that will fill him up and make him not leave the table wanting "something else."

  2. I use lots of beans and seitan in my meals as well as unrefined whole grains. My husband is a big eater too and these things seem to fill him up. Two great cookbooks that I use a lot are 500 vegan recipes by Celine Steen(which has easy recipes for making your own seitan,crumbles and faux sausage) and 1,000 vegan recipes by Robin Robertson. I use these two books on a weekly basis and my husband and two small children are flourishing. Good luck!

  3. Somewhere long ago I read that many families typically cycle through only about ten recipes for their main meals (those consumed at dinner time) so if you start from that assumption, it's not so overwhelming. Then you can grow the repertoire from there.

    The initial list could include:
    a couple of takes on baked (or non-baked) pasta, one with a red sauce and one with a "cheese" sauce, incorporating your choice of veggies and protein;
    a stir fry favorite with veggies and seitan/tofu/other protein;
    a fajita/taco style dinner, again with veggies and your choice of protein and fixins;
    a take-off on the standard protein/starch/veggies plate (such as veggie steaks, baked potatoes, and steamed veggies with vegan margarine and seasonings);
    a "ballpark" dinner: veggie burger/hot dog on a bun, roasted or fried potatoes, and cole slaw;
    a hearty stew with good whole grain bread and salad;
    a chili using veggie crumbles/burgers, with cornbread and salad;
    baked beans with veggie franks, cornbread, and salad;
    you get the idea.

    I love Robin Robertson's "Vegetarian Meat and Potatoes" cookbook because the approach is geared towards helping families ascend to a vegetarian/vegan way of cooking, while recreating familiar dishes (see "Garlic Smashers" on page 205 for a great mashed potato recipe).

    And don't be afraid to season!
